DIY Damper

Ingredients:

3 1/2 cups Self Raising Flour
1 stubbie beer (375ml), I prefer dark ale
1 pinch of salt
2-3 handfuls of grated cheese (about 200 grams)
Italian Spice Mix

Put flour in large bowl, form well in center, add salt and then pour beer into well. Mix with wooden spoon until batter has formed then add cheese and combine.
Place batter in a greased bar baking tin, you can also put some baking paper on the bottom and top with spice mix.
Bake for about an hour, it’s done when a skewer inserted is clean when removed. In the bush I like to bake it in my Cobb, if you want to practice at home you can bake in a medium hot oven (about 175 degrees celcius or 350 Fahrenheit).
